Hi! I made these cookies seyterday, and my whole family loved them. I admit that I had to make a couple of substitutions. Once I started, I realized I didn’t have any more flax, so I used 1/4 cup hemp nuts and 1/4 cup chia seeds, ground together. I think it made a really similar contribution to flax seeds. I do have one super nit-picky comment about the recipe, and feel free to delete this if it’s too annoying. I read a lot of cookbooks, and have been cooking for a couple of decades, and one thing that really helps in the readability of a recipe is that ingredients are usually listed in order of when you add them. When the instructions say “mix dry ingredients”, all the dry ingredients are grouped together, flour, baking powder, spices, etc. Then the wet ingredients are grouped together, and anything you add at the end is, well, at the end.I looked through the recipe before I made it, but I still managed to mix just the first 5 ingredients, then the eggs and oil, mixed those two bowls together, and then saw that I hadn’t added the cinnamon or the vanilla. Now, I know I’m a dummy, but I’d like to point out that there are lots of dummies like me. I don’t know if it’s too late to change the recipe for the book. It would just be nice.Also, I got 3 dozen cookies using the 1T of dough suggested, and after the first batch, flattened the rest with moistened hands (so the dough doesn’t stick).
