Clarified Butter
For the last few months Jeremy and I have used clarified butter as our main fat source. Since switching to paleo I have been scared to eat butter even though Whole9 has this great manifesto about butter. I finally decided to give it a try and see what I was missing and also see if I noticed any negative affects from it. All I can say is it tastes amazing and I don’t plan on turning back!
Clarifying butter is a process of removing the milk proteins, leaving behind pure, golden butterfat.
Our meat and butter quality is of utmost importance to us so we choose to buy grass fed meat as well as pastured organic butter. I have included many pictures of the process. We like to make a bunch of butter at once (yesterday we made 6 lbs), but you can make a little at a time if that’s easier for you. There is a quick little how to video in the manifesto linked above or you can google it.
